Nice to meet you!

Wow, it's cold. What i hate most about June in Utah is the weather. We usually have 2 options:
  1. It's really hot and dry
  2. It's freakishly cold and wet
Not much to go by, is it? i would much rather have it burning hot. "Why would you say that?" you ask? I will give you 2 words: No. Heat.
Because my house has no heat, i think i am going to make some m&m's. and by m&m's i mean;
Mocha Meringues
(not only are these delicious little confections practically fat free,
they are also cholesterol free. talk about shameless indulgence!)

6 egg whites, room temperature

1/4 teaspoon salt OR

1/4 teaspoon cream of tartar

2 teaspoons of instant coffee

1/4 cup dutch-processed

1/2 cup granulated sugar


Preheat oven to 250 degrees F.

Line cookie sheets with parchment paper to prevent the cookies from sticking.

Sift together the sugar, cocoa and instant coffee. set aside.

In a large bowl using your electric mixer, beat egg whites until foamy/frothy. While beating to the frothy stage, add salt or cream of tartar. After reaching the frothy stage, add the cocoa/sugar/coffee mixture SLOWLY (1 tablespoons at a time) while continuing beating until the egg whites are stiff and glossy.

Drop batter by tablespoonfuls onto prepared baking sheets (1-inch apart).

Bake 90 minutes; turn off the oven, open the door slightly (secure with a wooden spoon), and allow cookies to cool in the oven. Remove from oven and store in a tightly covered container.

then proceed to devour at your leisure. they are as good warm as cool.
