Getting Better

Yet another hot day in the city. although today was not as bad as yesterday, the heat stills sucks.

so, today i entered a contest for thrift town to potentially win an iMac. the rules were simple, wear a used, vintage gown to prom? enter to win! all i had to do was provide a picture and a quick essay. i hope i win:)

r the fourth of July weekend i am going to dog-sit for my aunt. yay! Extra money! (something tells me this is going to be my only source of income this summer) i took two pages of notes whilst my aunt was explaining things. did i mention these dogs don't eat dog food? yeah, i have to be their personal chef, feeding them stew meat and chicken. *sigh* It's a small price to pay, and i really don't mind. i think my cat is one step from making me cook her Filet Mignon myself. which makes me think about all the stuff us humans do for our furry companions. it's a lot! did you know Americans spend about 75 billion dollars a year on pets? it's a bit crazy. i suppose it makes sense though. they deserve it.

I just realized that a bunch of my favorite movies are set in New Mexico....

Here comes the sun

Happy first day of summer! (Although summer began about three weeks ago for me)

On Saturday, I hit the wall. The wisdom tooth wall that is. I woke up feeling like I had splinters on my jaw. The pain was excruciating. I could not open wide enough for a spoon to go in my mouth, I couldn’t laugh, nothing. I suppose it had to hit sometime, didn’t it? Prior to Saturday, I didn’t think it would be that bad. Boy; was I wrong. It made me so mad! Because I was all drugged up and shit, it ruined my day! The room was spinning even when I was sitting down! I was pretty dope up all day. But that didn’t help the pain much. Hmmm… if I had 3 wishes then….

  1. Make the pain go away
  2. Give me a case of Lay’s Potato Chips and Oreos
  3. Make humans evolve so we don’t grow pointless teeth in our faces. Period.
So, for father’s day I decided that my present would be to make my dad some curry for dinner. So this is what I came up with.

Burmese-Style Pork Curry with Fresh Ginger
If you want a creamier texture to your curry, I strongly suggest replacing the water with coconut milk. Be sure to check the label on the can/jar. Do not use cream of coconut! Oh and this dish is even better the day after, so do be afraid of leftovers!!
¼ c. of julienned fresh ginger
1 ½ lb. pork loin, cubed
2 tbsp. of red curry paste (you can make your own, but store-bought is so much easier)
¼ c. of brown sugar (I prefer the richer taste of dark brown)
2 c. water
½ c. of cooking wine/hard liquor/rice beer
2 tsp. ground turmeric
1/4tsp. ground cardamom
1 tbsp. light soy sauce
Hearty pinch of salt
¼ c. of minced onion
3 large cloves of garlic, minced fine
1/4c. of lime juice
Peeled strips of carrots (optional)
Combine ½ the water and all the alcohol with ginger (and carrots, if using). Set aside for later.
Combine brown sugar, pork cubes and curry paste in a large wok or saucepan. Cook on med-low heat for about 15min. stir occasionally.
Stir together rest of water, soy, turmeric, cardamom, and salt. Pour over pork. Bring to a nice rolling boil then bring down to a simmer for 45 - 50 min. or until the sauce is nice n’ thick.
Add the ginger stuff to the pork stuff and simmer for another 5 – 10 min. serve warm over a bed of jasmine/saffron rice with some naan.

Honey Pie


This is my first day post-surgery! yay! (i think...) And i have to admit, it does not hurt as much as i thought it was going to. Sure, my jaw hurts to open and i can really chew, but from seeing my siblings suffer over winter beak last year, i was freaking out.
Whilst sitting in the waiting room of Wisdom Teeth only, which was the closest place to my house and the people were nice, there was one girl in the room with me. It didn't help her much to hear about the other patients' having to wheeled out in a wheelchair or that they needed assitance being taken out by way of "the back door."The whole time her face was pulled into an semi-permanent look of terror and anxiety. i was afraid she wouldn't go in when they called her name!

I suppose she didn't have it too bad. in the room next to was a little girl of twelve. Just think of it! getting your wisdom teeth out at the age of 12! and i thought i had it bad!
Trust me, i certainly do not. I've got all the soup i would ever want to eat, gelato, and my family basically waits on my every command. but all i really want to is to move on with my life. i feel like some fat, lazy person sitting around all the time! it's not like my legs are broken or anything!
But do you know what i really miss? FOOD! i can't eat what i cook! hmmm... maybe i could brush up on my mousse skills....

Whoever said, "Don't cry because it's over, smile because it happened," never had their teeth pulled.

A Hard Day’s Night

I finally have some pictures of the meringues to show you! Instead of using the powdered form of the instant coffee (which I used 1 packet of VIA Colombia roast, by Starbucks), I dissolved about a tablespoon of coffee to the instant. (That’s only because the powder sort of melted. Long story…) when I added it along with the fresh egg whites, it gave them a nice caramel color and another layer of flavor than if I mixed them with the cocoa powder. So here’s a lovely picture I took on my phone of them.

So, I got a little bit of a shock this morning. My mom reminded me that I have an appointment on Thursday to get my wisdom teeth out. Here’s my reaction:

WHAT?!?!

I had no idea that it was in two days!!! What kind of warning is that, mom?! She wasn’t even sure that was the date. She had to ask me! I think I (wisely) forced that out of my brain. My siblings just recently had theirs out and it did not look fun. Ahhh! Why? Why can’t we have already evolved so we don’t have to remove useless teeth? NOO! You can’t take me alive!!

Nice to meet you!

Wow, it's cold. What i hate most about June in Utah is the weather. We usually have 2 options:
  1. It's really hot and dry
  2. It's freakishly cold and wet
Not much to go by, is it? i would much rather have it burning hot. "Why would you say that?" you ask? I will give you 2 words: No. Heat.
Because my house has no heat, i think i am going to make some m&m's. and by m&m's i mean;
Mocha Meringues
(not only are these delicious little confections practically fat free,
they are also cholesterol free. talk about shameless indulgence!)

6 egg whites, room temperature

1/4 teaspoon salt OR

1/4 teaspoon cream of tartar

2 teaspoons of instant coffee

1/4 cup dutch-processed

1/2 cup granulated sugar


Preheat oven to 250 degrees F.

Line cookie sheets with parchment paper to prevent the cookies from sticking.

Sift together the sugar, cocoa and instant coffee. set aside.

In a large bowl using your electric mixer, beat egg whites until foamy/frothy. While beating to the frothy stage, add salt or cream of tartar. After reaching the frothy stage, add the cocoa/sugar/coffee mixture SLOWLY (1 tablespoons at a time) while continuing beating until the egg whites are stiff and glossy.

Drop batter by tablespoonfuls onto prepared baking sheets (1-inch apart).

Bake 90 minutes; turn off the oven, open the door slightly (secure with a wooden spoon), and allow cookies to cool in the oven. Remove from oven and store in a tightly covered container.

then proceed to devour at your leisure. they are as good warm as cool.
